This meal is one of my family's favorite. Creamy, delicious and flavorful. A guranteed hit with your friends and family.

2 lbs jumbo shrimp
1 box penne pasta
1 Red and Green bell pepper (cut long way)
2 spring onions (chopped)
3 garlic cloves (minced)
5-7 leaves Fresh Thyme
Fresh Parsely to garnish (chopped)
1 tbs coconut oil to sauté shrimp
1 tbs olive oil to sauté veggies
What's Needed for Pasta Sauce
2 cups heavy cream
1 1/2 - cups grated mozzarella cheese
1/2 cup of parmessan cheese
1 tsp old bay
1/2 tsp lemon pepper
1/2 tsp black pepper
1 tsp all purpose seasoning
2 tsp paprika
*1 tsp jerk seasoning (optional)
Instructions for Shrimp
Rinse and dry shrimp. Place shrimp in a bowl.
Add 1/2 tsp pepper, 1/2 tsp basil, 1/2 tsp garlic, 1tbs old bay and 1 tbs jerk seasoning. *if ou prefer your shrimp to be spicy add a 1/2 tbs more of jerk seasoning. Mix together well. Making sure seasoning is spread evenly. Set aside.
First bowl 3 cups of water. Add a sprinkle of sea salt and olive oil to the water. Let boil before putting in your pasta. Keep pasta in for a minute then turn heat down to medium. Let pasta cooked for 10-15 mins. Don't overcook your pasta. Once done drain and set to the saide. *Chef Kat tip - add a little olive oil to your cooked pasta, shake pasta to ensure pasta is covered evenly and let sit. This will keep the pasta from getting dry.
Take out your sauté pan and pour in the coconut or olive oil. Allow oil to get hot before placing your seasoned jerk shrimp into the pan. Cook shrimp for 2-3 mins on each side or until pink on each side. Do Not overcook your shrimp. Once done set the in a plate off to the side (uncovered). Wipe out pan clean and add oil for your veggie saute. Once pan is hot add chopped spring onions, garlic, thyme, red and green peppers. Saute for 3-5 mins. I prefer a little crunch to my veggies so I dont cooked them long. At this point you want to make your sauce...
Add your heavy cream to the sauted veggies along with your seasonings - 2 tsp papirika, 1/2 tsp black pepper, 1/2 tsb of lemon pepper, 1 tsp of all purpose seasoning or season-all and 1tsp of old bay. Give it a few good stirs then add both cheeses (Mozzarella and Parmesan). Continue to mix well for 1-2 mins. Then add your cooked pasta and shrimp. Mix well with a wooden spoon.
